You could be accused of shoplifting if you’re seen. It’s easy enough to do it the right way.

This happened to someone I know. She just switched the items and the alarm went off when she left the store. She tried to explain what happened, but they didn't believe her, and thought she was just making excuses. Thankfully, they let her go with a warning.

If you have to do this, you can just ask an employee if it's okay to switch it.

How is this NOT stealing? You gave the store money and they agreed to give you a piece of property they own in exchange. They did NOT give you permission to take anything else. It doesn't matter if you leave something behind—you are taking something they did not give you permission to take.
