I've been using the bricks of dry yeast. The problem is that the package is just too big for my small family. My challos taste very yeasty and I'm wondering if the yeast doesn't stay fresh even though I keep it in the fridge.
Am I better off buying the 3 pack of Fleischman dry yeast each time I bake? TIA

I switched (years ago) from the bricks of yeast to the rapid rise dry yeast packets and my challos are much better.

Lkwdlady, is a 3 pack of dry yeast enough for 5 lbs of flour? I usually use 3 tablespoons of dry yeast.

Each packet has 2 1/4 teaspoons. For 3 tablespoons, you need 4 packets.

Your not supposed to keep it in the fridge. Keep it in a cool dark place. I haven't had any problems with it this way.

I have 2 different recipes that I use.
One recipe calls for 4 packets and the other is 3 packets (for 5 lbs).
The recipe that uses 3 packets is very into proofing the yeast.. first just yeast with warm water and sugar.. then with some more ingredients.. and then rise the dough.. so you’re basically getting the most life out of the 3 packets of yeast.
If your challah tastes yeasty I would suggest using a little less yeast..

I get Red Star by the lb. and keep it in the freezer.

Maybe that's a better solution than keeping it in the fridge. The fridge didn't work well for me as I wasn't using it up fast enough.
