Ty. Looks great to try (maybe even for this Shabbos) but I actually need a coffee cake recipe that I can bake into mini loaf pans.
And while I’m a confident cook, I’m not much of a baker so must be uncomplicated.

I have one that I saved here from this site, thanks to whoever posted it! It is SO GOOD. My husband said it was the best dessert I ever made (and I make a lotttt of desserts).
Cake ingredients
2 large eggs
1 cup milk or non-dairy creamer
3 cups all-purpose flour
1 1/2 cups sugar
4 tsp. baking powder
1 tsp. salt
1 cup butter or margarine melted
cinnamon-crumb topping ingredients:
2 1/2 c. all-purpose flour
2 c. sugar
1/4 c. ground cinnamon
1 c. butter or margarine, melted
1 T. vanilla extract
Preheat oven to 350
Grease a 13x9 inch baking pan
Beat eggs and milk in small bowl
Combine flour, sugar, baking powder, and salt in another bowl.
Stir in margarine
Stir in egg mixture, beating until just combined.
Pour batter into pan
Topping:
Combine flour, sugar, cinnamon in a bowl and blend
Add margarine and vanilla stirring until crumbly
Sprinkle with topping
Bake for 45-50 minutes or until you can insert a toothpick and it comes out clean
Cool in pan on a wire rack for 10 minutes then remove from pan and cool on a wire rack.

My easy go-to coffee cake recipe, from Nitra cookbook page 165.
For best results, a bosch mixer or the like is recommended.
Preheat oven @350
12 eggs
3 cups sugar
1 TBS vanilla sugar
1/2 cup oil
2 TBS coffee dissolved in 4 TBS hot water
3 tsp baking powder
3 cups flour.
Mix whole eggs and sugar on high speed till foamy. Add rest of ingredients in order. Bake in lined cake pan or in multiple smaller ones for an hour or until toothpick comes out clean when cake is pricked in center.

Am I the only one who thought coffee cake is "cake good to eat with coffee" (a la Entenmann's crumb coffee cake) rather than "coffee flavored cake"?

That IS what coffee cake is and what I'm looking for, lol!
(Though I do love coffee and am not opposed to it as an ingredient)!

Is that 1/4 teaspoon cinnamon in the crumb topping? And 1 teaspoon vanilla extract or 1 tablespoon vanilla sugar?
