Salads. Trifle style or otherwise.
There's an edamame corn pickle salad I saw on kosher.com.
Peas might go in soups too.

Sauté them in olive oil, salt, and all spice
Serve with rice
Defrost -DONT COOK- and put them in any salad

I have a lot... May be a soup would be better? Any good recipes for corn soup, or a veg soup made with frozen mixed veg?

Make a big minestrone soup.
Saute a package with chopped onion and garlic, season well and toss with orzo.
Make macaroni salad, dress with garlic mayo dressing and toss in chopped red onion and pickle along with thawed peas and carrots.
Use in chicken pot pie.
