You mean the brown paper pans? I make babka and bundt cakes in these pans.

Fill them about two thirds full, to allow room for rising without overflowing.

Smaller pans will bake more quickly than the larger one, so start checking them about ten to fifteen minutes earlier than you do when baking the recipe as one large cake.

Arrange them on a baking tray to take in and out of the oven all together rather than trying to position each one on the oven rack.

I have found this recipe, by Norene Gilletz to be very accommodating, and works well baked in any size pan. The original recipe is for twelve cup cakes. It works well based as one 8×8 cake, or doubled as a 9×13, or really cooked in any size pans I have to hand.

1 1/2 cups flour
1 cup sugar
1/3 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
3 tbsp oil
2 tbsp applesauce (can replace with oil)
1 tbsp white vinegar
1 tbsp vanilla
1/2 cup orange juice
1/2 cup coffee or water
1/4 cup chocolate chips (optional)

Mix dry ingredients. Add remaining ingredients except chocolate chips. Mix until just smooth. (Works best when mixed by hand). Stir in chocolate chips.

Bake at 350 for 20-25 minutes.

*I often add grated orange rind, since I love the chocolate orange combination.
*Don't leave out the vinegar. You don't taste it, but is is essential as a rising agent.
*It's meant to be low fat recipe, hence the apple sauce replacing part of the oil. I often don't want to open apple sauce for the sake of two tablespoons, so I use oil instead. Either works well.

I just noticed I made a mistake when copying out the recipe.

It should be 1 1/2 cups flour.

I'm going back to edit the original post, but clarifying it here in case anyone has already copied it down.
