I put it in oven on 200 deg according to recipe. It has been 2 out of 3 hours and there is no smell of baking meat at all. Do I leave it in? Turn it up? For how long?

I dunno. I always do London Broil on the grill (7-8 minutes first side, and about 5 minutes the second side.)

If it comes out tough or overcooked, do not despair. When it cools cut it into cubes, and make beef stew. It will be delicious.

That's about the temperature of a slow cooker on low. I would think that you're going to need a lot more than 3 hours.

Maybe just finish baking according to the recipe and then sear on each side.

Lilies,
How did it come out?
I have a London broil marinating in my fridge now, but it looks like a thick cut and I wonder if just broiling will be enough. I was thinking of cooking low and slow but don’t want to end up with tough meat.

Delicious! Wasn't tough at all but I did turn it up to 350 for 2hr.

Thanks! I ended up adding a cup of water and sticking it in my oven covered on 300. Now I’m wondering if I should still sear it when I come home. You didn’t sear at all?
