I use a scooper for my cookie dough recipes and don't roll them out.

This. My pesach cookie recipes are very soft. I either use a small cookie scoop or 2 spoons. Easy peasy.

That’s fine, but can I make them in a log, freeze and slice when I’m ready.
Or are Fat ratios different for sliced cookies

Ah ok so you want to be able to make it in advance and bake fresh. Never did that with pesach goods as I don't have a Pesach kitchen so everything gets baked/ cooked within the week of Pesach. And then I freeze the cookies already baked.

I think if the cookie dough is solid enough you should be able to freeze in a log.

There are 2 types if cookies I make. Chocolate chip- I can see that being frozen as a log and sliced. The dough is soft but it's still dough like consistency.

My second recipe is chocolate cookies similar to consistency of crinkle cookies. That wouldn't be able to hold the shape of a log.

So if the batter is rollable I can also make it into a log freeze and slice instead of rolling cookies?
