Making Pesach for the first time (unplanned). What are some easy Pesach recipes? Using aluminum pans as much as possible would be best. I'm planning lots of disposables.

I think I need to plan a menu before making all my shopping lists.

Cut potatoes and onions into slices. Place in bottom of pan. Put chicken legs on top. Sprinkle with salt. Bake covered, uncover for 20 minutes or so. Enjoy.

Cut potatoes into chunks. Boil in water. Drain partially. Add crumbled raw ground beef and cook until browned. Enjoy.

Make large pot of chicken soup with a large variety of vegetables. Use a whole chicken for optimum flavor. Try parsnip, celery root, carrots, onions, potatoes, butternut squash. Remove chicken from bones and return to soup. Give everyone a big bowl with lots of vegetables and chicken.

Put chuck roast (in net) into pot or pan with water. Pour a cup or two of wine over it. Add onions and carrots. Boil for an hour or bake for longer. Refrigerate. Slice (inside will be raw) and return to pot or pan until hot and fully cooked.

Place salmon into pan. Sprinkle with lemon juice and salt. Bake.

Boil sweet potatoes. Mash and add sugar. Sprinkle with chopped nuts.

Me too.
It will be very simple. I am not baking. We will eat eggs for breakfast with matza caffee (basically broken matza, lots of sugar, an once or 2 of coffee and milk ) or matza and jelly.
Matza and cheese sandwiches for lunch.
Dinner will be baked or boiled potatoes with chicken or meat and carrots/broccoli/cauliflower/zucchini.
Dessert will be baked apples, fresh fruit....
Snacks will be bissli, potato chips, chocolate, almonds or fruit.

We are reverting back to Pesach of my childhood in the 70s

Baked frittata for breakfast in a disposable 9" round pan.
Tuna and matzah for lunch, with veggie sticks.
Meat or chicken baked over cut potatoes & sweet potatoes for dinner, with a cut salad.
Burgers & fries baked on a disposable cookie sheet.
Salmon & broccoli baked on a cookie sheet.

YT meals can be similar.

If you have the ingredients, there's a great choc chip cookie recipe somewhere here. It has pudding.

Roasts are easy to make, and you can make a big one, separate gravy, refrigerate overnight, slice and freeze half with half the defatted grave.

Shepherds pie, chicken soups, lots of roast veggies with meat of choice.

Pesach food is the most delicious because it is just pure food. No ketchup, onion soup mix or other strange additives.

Tuna, cottage cheese, shredded cheese for lunch

Eggs and fruit for breakfast

Tip: you only need one dish for Seder night. Dinner is late and no one really has an appetite.
