Delicious and easy cake

9 eggs
9 tablespoons potato starch
9 tablespoons sugar

Line a large disposable cookie sheet with parchment paper. Preheat oven to 350 degrees.

Beat eggs with sugar ( no separating eggs). When then are light and fluffy, mix in potato starch by hand. Pour onto prepared cookie sheet. Bake for 18 minutes. Check that it is uniformly light brown, you may have to turn the sheet halfway through.

Place a clean towel on the table and pour some confectioners sugar on it an spread it around. When the cake comes out of the oven, turn it out onto the towel. Peel off the parchment paper and roll up the cake in the towel like a jelly roll.

When the cake is cool, unroll it and spread any jelly or make a frosting, and re-roll. You can decorate the top with frosting, or you can take some confectioners sugar and mix it with a few drops of water, spread it over the top, and put on some sprinkles.

Do you think this will work with no sugar, and more potato starch for a savory application.
Or will it be too eggy tasting
I once saw a tuna jelly roll recipe (NOT Pesach)

Is the sponge sweet tasting or kind of neutral
The chametz recipe I saw uses the same sponge for savory and sweet.
The ratio is 1 TBSP of sugar, 1 TBSP flour, per egg.
It seems like the same ratio

Cook your normal stuff (?)

breakfast, eggs, matza brei - if applicable, salad, veggies

chicken+potatoes every day,

mashed potatoes, baked etc.,
chicken also with: sweet potatoes, with vegetables zuccihni and carrots, grilled chicken

soup every day(= twice for chol hamoed): vegetable, orange soup, potato

Shabbos/Yom Tov - regular potato kugel, cholent without beans or barely

fruit salad

the only "pesachdig" recipes are really the cakes
