For some reason my cakes are not baking evenly.
Any advice?
My Oven IS very old but have been pesach baking in it for many many years. Seems like this year in particular the cakes are so unevenly baked.
Baking in a 9x13 pan. & edges are dry & centre have a large crater looking mound.

Preheat the oven higher, and in 5 minutes turn it down to your usual baking temp. You'll get what's known as "oven spring" that boosts the volume and sets the outside, and that holds up the structure of the cake.

Keep a close eye on the cake, and rotate the pan halfway through if it's looking uneven.

When the cake is done, close the oven door and let it cool in there. Don't touch it until everything is set.

If all else fails, add a little frosting, and make them into balls. Put them on toothpicks, and dip them in a thin frosting glaze. Now you have cake pops!

Thanks FF
All your above recommendations apply to pesach cakes too?
