First time making pesach here. Would love to see everyone's menus. I plan on serving same food second days.

I use minimal ingredients.

I already made bezras Hashem:

Apple sauce
Pear compote
Chicken Soup
Cream of chicken zucchini soup
Butternut veggie soup
Egg crepes for lukshen for soup, for liver & potato blintzes, for lukshen kugel.
squeezed orange, lemon & grapefruit juice

Made a big pot of chicken soup so I can have in the freezer for stock.
I mashed the veggies from the soup. Shredded the chicken and filled blintzes. So have a veggie blintz ready.
Made tongue.
SautΓ©ed a lot of onions. Put them in small containers to be taken out when needed
Make my own mayo. Can’t stand the pesach stuff
Roasted eggplant.
Red pepper soup.
Apple lukshen kugel.

I use almost nothing and cook very simple for Pesach. I cook on Yom Tov, I don't do that much before. Here's my menu, if it helps anyone!
(I buy Pesach nosh and serve it for dessert at the last meal of Pesach - Moshiach seuda - after Yom Tov is over.)

I'm always saying how weird the texture is! Can you post your mayo recipe?

I live in Israel so I only made my menu for the first day. Will figure out shabbat on Thursday night

Erev pesach
Orange soup (butternut squash and sweet potato)
Potato salad
Deli and fresh salad
(This is available for the kids all day)

Seder night
Hard boiled eggs
Chicken soup
Matza balls
Pesach noodles
Bbq chicken
Roasted potato and sweet potato (cube, season, roast with some olive oil)
Roasted broccoli

Thursday lunch
Fresh salad
Brisket
Roasted purple cabbage
Roasted carrots
Quinoa

Also in Israel: Have not made anything yet.
Seder night: gefilte fish,
Chicken soup with kneidlach and vegetables
Boiled chicken from soup
Possibly salad
Apple compote from can

Lunch: First course - mashed eggs/avocados or both with matza
meat and potatoes/potato kugel if I get around to it b/c only have hand grater as first time making pesach
dessert: tbd

That's it. We will see about the rest. I really do like to patchke usually but this year will be simple iyh. Also like to follow what my mother did.

Wednesday Night Seder:
Chicken soup
broccoli kugel - We don't use much so it is broccoli, homemade mayo, eggs, salt, pepper, and fried onions
chicken (maybe in the soup or maybe separate)
Thursday Lunch:
chicken blintzes with mushroom sauce - appetizer
meat
apple pear crumble
roasted baby red potatoes
strawberry ices
Thursday night seder:
chicken soup
cauliflower kugel - same idea as broccoli kugel
chicken (maybe in soup or maybe separate
Friday lunch:
doughless potato knishes with mushroom sauce - appetizer
blueberry crisp
onion kugel
coffee ice cream
Friday night:
salmon and gefilte fish
homemade dips
stuffed chicken (homemade kishka stuffed under the skin)
potato kugel
leftover kugels
cake
Shabbos lunch:
liver and eggs
homemade dips
yapchik
stew
Shalosh Seudos:
avocado salad
lettuce salad
tuna
eggs
salmon
gefilte fish
