Supposedly you can make mayo with a cooked egg yolk. I seem to remember I was not very successful but if you have oil you don't mind wasting, it's worth a try!

Extra virgin olive oil tastes bad in mayo - too strong.
The extra light olive oil is tasteless, like canola. On pesach we even use it in cakes and cookies because we hate cottonseed oil.
