Apologies in advance that I’m not fond of measuring things, so these measurements are approximate.
We used these as “potato challah” with dips at the Yom Tov meals.
Last night my kids cut them in half so they were short, (imagine cutting off the top of a cupcake) and spread pasta sauce and cheese on them, put them in the oven for a while, and they were delicious pizzas! They would be good as sandwiches too!
About 5 lbs of potatoes, cooked and mashed well
About 5 eggs
About 2 cups potato starch
About 2 T salt
About 1/2 -3/4 cup of sugar (my husband thought they were too sweet, the rest of us thought they were as sweet as normal challah)
About 3 T baking powder
About 1 cup of oil
This made a lot, I made about 30 then froze the rest of the dough on erev Yom Tov as I was running out of time.
Mix well. Place in cupcake holders and bake about an hour at 350.
At first I didn’t have cupcake tins and holders, so I used heavy duty foil and shaped it around a spice jar to improvise and put them close together in a 9x13 pan.

Oooh, we're so gonna try these.
Did you play with other starches? We have tapioca as well...
I love (chometzdik) sweet potato rolls. I wonder what would happen if I used those instead of some of the regular potatoes (I don't have any now but for the future...) Maybe then wouldn't have to add sugar...

We eat gebrochts and I made pesach rolls with matza meal, but the recipe looks a bit similar to gnocchis except baked, not boiled.

This recipe was great! I made some rolls for sliders, hotdog buns, and I dropped by teaspoonful into water to make shlishkes (gnocchi).

Yes. I did that. I topped some of them with sauteed onions for onion rolls.
Also put chia seeds on top to make it look like poppy seeds. (For those that eat chia.)

I did that. Baked on cookie sheet and made pizza on there.
