I successfully made Matzo Pizza on my gas stovetop and wanted to share:
Equipment:
Large frying pan, not teflon, you'll ruin the pan!
Cake rack that fits in the frying pan
Heavy-duty aluminum foil or a lid for the frying pan
Ingredients:
Matzos (I used Haddar Whole Wheat Shmura Matzo)
Thick pizza sauce such as Gefen Classic Italian Pizza Sauce
Olive oil
Shredded mozzarella cheese
Method
Put the cake rack in the frying pan and turn on the burner. Start on high heat until pan is very hot, then turn to low. Spread a thin layer of olive oil on top of the matzo (I spead it with a napkin). The olive oil will keep the matzo from getting soggy. Then a layer of pizza sauce. Then top with shredded cheese.
Place the matzo on the cake rack. Put the aluminum foil or lid on top. Cook on low flame until the cheese melts. Serve hot.
Notes:
Prepare only 1 at a time.
This will not brown on top.

A simpler way is just frying it upside down. My in laws do this. Heat a frying pan, spray with oil. Prepare the matza pizza with ketchup and cheese. Flip it into the pan, cheese side down. Cook until melted and flip out onto plate.
