Just invented an awesome salmon recipe & other adventures

So here's my activity for today.

I bought some coconuts bec I was told excellent for restoring electrolytes for DH who's recovering. Meanwhile never got around to opening til today. Luckily I happened to google coconut water & saw a guy explaining how to peel outer shell (after dropping rocks on your coconut when marooned on an island : ) Bec I had only ever seen them w brown hairy shell, but now I realized there's a tough fibrous layer outside that, which is how mine came (although now I'm thinking, do you suppose it's okay that they cut it with a non-Pesachdik machete in Thailand? Bec I used my pesachdik knife to cut away that layer).

So then I wrapped in several paper towels & smashed with the heaviest tool I could find (because somebody borrowed my hammer...) & got the brown shell partially cracked. Baked for 30 minutes or so. It does not taste so much like what I remember (also very thin layer of coconut meat) but it's marked young coconut so maybe we always got more mature ones.

Aha, I think. I will make coconut crusted salmon!

First, preheated oven to 450 or so, & sliced a red onion & put in oven w some oil to start baking while I sliced some mushrooms, put those in too. Then decided to keep them separate as a side dish.

Now I took the salmon, drizzled some oil & fresh lemon. Took some leftover liquid from poached pears in wine sauce & drizzled that too. It would have been good to marinate a while but had no time for that.

Minced up some coconut as small as possible (bec somebody borrowed my food processor. At least I think so, I have barely unpacked my pots etc.) Added some ground almonds & oil, & pressed that on top of each piece of salmon. Broiled 10 min then baked another 5 or so.

It is really good. I just went back & ate the 3rd piece.

I think I need to start writing a recipe column. Ya think?
