Is there a way to make a crockpot supper without a crockpot? Like a 9x13 covered in the oven?

Sure. What are you trying to make. Do you want it to cook all day or be done in 2.5 hours?

Generally covered in a 350 oven for 2.5 - 3 hours will get you the slow cooker results but it depends what's being cooked.

A beef stew I'd first do 350 for 3 hours and then 250/225 till ready to eat. Make sure it has enough water and it's covered very well.

You could also make it in a regular stockpot or dutch oven on a blech over a low flame, provided you keep an eye on it and stir it now and then.

I made delicious goulash. Browned onions, Green pepper, meat, then add potatoes, some water and spices, bbq sauce. Delish!
