Carrot cake without crushed pineapple or OJ

I am looking for a carrot cake recipe that does not use canned pineapple or orange juice, preferably a recipe that is intended to be made in a loaf or Bundt pan rather than a flatter pan. Thank you.

I have a delicious carrot muffin recipe. Not sure if it can be made as a cake as well, but I'd assume yes.

6 carrots, cooked and mashed (1.5 cups - I usually cheat and use baby jars for this)
2 carrots, shredded
1.5 cup sugar
2 cup flour
3/4 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1 cup oil
4 eggs
2 tsp vanilla sugar

Mix all ingredients. Bake at 350 for 25-30 minutes. Yield 2 dozen muffins

*if you make it as a cake it probably needs longer baking time

Very Easy carrot cake

2 cups flour
1 cup brown sugar
1 cup oil
1 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1 vanilla sugar
4 eggs
2 loose carrots grated (set aside a bit for garnish)
1/2 tsp cinnamon

Bunt pan Bake on 350 for 1 hour

Glaze:
1 1/4 c confection sugar
3 Tbl hot water
3 Tbl oil

Hearty appetite!!

Has anyone made this and can tell me how many cups of shredded carrots?
I have baby carrots I'd like to use up.

Cake is cooling on the counter already. Smile

Since I didn't get replies in time, I used 1 and 1/2 cups of shredded baby carrots.

It looks delicious, but I still need to cut up and taste it to find out if this is the right amount.

Have you or anyone else tried this recipe?

Does it have to be baked in a bundt pan?

If not, which is a tried and true carrot cake recipe?

You think I can omit nuts, with no substitution?

Carrot Cake

4 large eggs
1 cup oil
1 - 1 1/3 cups sugar
1 heaping tablespoon baking powder
1 teaspoon baking soda
1/4 - 1/2 teaspoon salt
2 cups flour (a drop less if adding granola)
1 cup chopped nuts
1 heaping teaspoon cinnamon
1 pound carrots, peeled and finely shredded

Combine and bake 1 hour at 350° F.

You can sub 1/2 cup granola with or without 1/2 choc chips for the 1 cup of nuts. Use a little less than the 2 cups flour in such a case due to oatmeal in the granola.
