Any kind of fluffy cake. I've done all types of flavors vanilla, chocolate, coffee, carrot....

As far as I know there are a few ways to make a layered cake.
1- make a cake in a 9x13 or tube pan and cut in half
2- make a cake in more than one smaller pan and layer. There are ways To make it into a flat top or trim the rounded part.
3- make the type of cake that you roll.
There are other ways like layering a crepes, pancakes, cookies, or other things.

Any type of fairly plain cake that's not terribly crumbly will do. You don't want to use something very sweet because the jam or frosting or whatever you're adding will make it sweet to the point of nausea.
Rather than bake several layers or cut a rectangular cake in two, which risks ending up with two layers that are not exactly equal, you can also bake a cake in a smaller, deeper pan, like a loaf pan or souffle dish, and slice it horizontally, using either a long knife like a bread knife, or a piece of stout string, like dental floss, wrapped around the cake and then drawn tight. As the string tightens, it cuts the cake.
