Usually I buy those individual packets to make matzah balls. I only have a big container of the matzah meal right now. How much matzah meal to oil and eggs to make a batch for the shabbos soup?

1/4 c. matzah meal
1 Tbsp. oil
1 egg
This is the basic proportion. You'll probably want to double or more. And add seasonings like salt, pepper, dill, ginger.
If you're using Pesach matzah, particularly shmura, do a scant cup
Make sure to chill the batter for at least an hour.

I make a big batch with about half the container of matzah meal; 5 eggs; a splash of oil; salt; pepper; AND MOST IMPORTANT about a teaspoon of baking powder (makes them fluffy). Mix well, add some water (maybe a quarter cup?), mix again, and refrigerate for about a half hour. Roll into balls and drop right into boiling soup. Delicious!
(It comes out fine despite the variations in "splashes" and "abouts".)
