Hi folks,
I tore out the page with what looked like a great recipe for zucchini muffins with an almond / honey streusel topping. Of course the house is flying and I can't find it. If anyone has this week's Family First around would you mind posting the muffin recipe? I looked on the Mishpacha site and at Miriam Pascal's site but no luck. I'd bought all the ingredients and am itching to make these for the kids as they seemed reasonably "healthy."

1 large zucchini grated
Half cup oil
Half cup honey
Half cup unsweetened applesauce
2 eggs
1 tsp vanilla extract
1 and a half tsp cinnamon
1 tsp baking soda
1 tsp baking powder
Pinch sea salt
2 cups white whole wheat flour
Half cup milk or pareve milk
Glazed almonds
3/4 c sliced almonds
2 tbsp honey
1 and a half tsp cinnamon
1/4 tsp sea salt
1 tbsp oil
Squeeze water out of grated zucchini.
Whisk wet ingredients except milk then dry ingredients except flour.
Add zucchini and stir.
Add half the flour, milk and rest of flour.
Put in muffin tins.
Combine all ingredients for topping and top muffins.
18 minutes at 350°
Makes 18 muffins
