Getting sick of our typical chocolate chip cookies and looking for some new, easy ideas. Please only recipes without margarine. Points for being relatively "healthy" (but still yummy). Thanks!

Baid Yaakov Cookbook 2 has white chocolate mocha latte cookies (page 268) and chcolate chip coconut cookies (page 244).

Lmk if you don't have the cookbook, I'll try to post recipe tomorrow bln.

Here's the recipe, but I forgot that it has margarine 😬. Sorry!

White Chocolate Mocha Latte Cookies

2 1/4 cups flour
1/4 cup cocoa
1 tablespoon + 1 teaspoon espresso powder
3/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup (1.5 sticks) butter or margarine, softened
1/2 cup sugar
1/2 cup light brown sugar
1 teaspoon vanilla extract
2 eggs
1 (3.5) oz bar dairy white chocolate, chopped in to small chunks
1/2 cup semi sweet chcolate chips
1/2 cup pecans or walnuts, coarsely chopped

Mix first 5 ingredients in one bowl.

Cream butter, sugar and and brown sugar in mixer until light and fluffy. Gradually add flour mixture, about 3 minutes. Add vanilla and eggs. Stir in chocolate, chocolate chips and nuts. Scoop dough on to cookie sheet, or drop tablespoonfuls. Flatten slightly.

Bake on 350° for 10-12 minutes until edges are lightly browned.

Yields 36 cookies.

***My notes: I used regular coffee granules in place of the espresso powder. I diluted it in a bit of water.

I used regular white chcolate chips.

Snickerdoodles
3/4 C sugar
3/4 C light brown sugar
1/2 C oil
1 tsp vanilla
1 egg
1.5 C flour
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt

Topping:
1/3 C sugar
1.5 tsp cinnamon

Preheat oven to 400.
Mix up sugars, oil, vanilla, and egg.
Add in flour, baking powder, cinnamon, and salt.
In a separate bowl, mix up topping (honestly I just use a cinnamon sugar mix I have in my spice cabinet and sprinkle it on).
Roll dough into about 30 balls (personally I don't get that much) and dip in cinnamon and sugar mixture.
Place 2" apart on parchment paper lined cookie tray.
Bake 8 minutes.
Cool 1 minute before removing.

Outrageous Chocolate Chip Cookies
1/2 C sugar
1/3 C packed brown sugar
1/2 C oil
1/2 C peanut butter
1/2 tsp vanilla
1 egg
1 C flour
1/2 C oats
1 tsp baking soda
1/4 tsp salt
6 oz chocolate chips

Mix first 6 ingredients up and then add in the dry ingredients. Form into balls. Bake on an ungreased cookie sheet (I use parchment paper) at 350 for 10-12 minutes.

Variation: add 1/3 C cocoa to the dough for double chocolate chip.

Yes but they harden with time, best to make sure not to overbake and seal well in an airtight container.

I'm actually thinking more about this (haven't made in quite a while)...I feel like the outside does get harder/crispier as it cools but the inside stays softer.

I was mixing up the outcome with a sugar/sprinkle cookie recipe I sometimes make.

You most probably can. I have a friend that does it with many recipes. She doesn't half it she substitutes it entirely.
