I do 1/2 onion, diced
1 potato, peeled and cubed in large chunks
1/2 pound cholent meat
1/4 cup barley
1/4 cup cholent bean mix
Salt
Black pepper
Garlic powder
Onion powder
Paprika
Drizzling of soy sauce
3-4 tablespoons ketchup or bbq sauce
Cover just till the top with water
Cook on high for 2-3 hours and then lower to low and cook through shabbos till the meal.
I based this off the second BY cookbook's cholent recipe, mostly cut it down and played with the ingredients a little. It still makes too much!

Since Pesach I’ve been making a delicious potato cholent (no beans) which I find is so much lighter than bean cholent, and great reheated during the week (I make extra so we can enjoy it again).
4 potatoes
2 onions, sliced
Oil
Flanken, or kalichel, or cheek meat
Kishke
Paprika and smoked paprika
Black pepper
Garlic
Onion powder
Barbecue sauce
Sauté onions in oil, add meat and brown on both sides. Add potatoes, kishke, water to cover, and spices. When almost done, smash a few of the potatoes to thicken, and add some barbecue sauce, stir.
