This isn't my menu this year, but my simple Shavous menu from a few years ago:
Challah and dips served at all meals.

Night 1: Blintzes
Salmon Salad
Pasta with Vodka Sauce
Potato Salad

Day 1: Blintzes
Salmon Salad
Pasta with Vodka Sauce
(quiche maybe)
potato salad

Night 2: Fresh London Broil(this was from a year where it wasn't Friday night so it was super fresh, but you could replace with made before Shabbos)
Roast Potatoes
Southwestern Chicken Salad (green salad with chicken)

Day 2:
Deli Roll
Southwestern Chicken Salad again
Potato Kugel

This year is definitely going to be very simple for us, currently in 'bidud' here in Israel until after Shavuos since we just returned from abroad. I plan to basically just use what I have on hand rather than bothering people too much to buy ingredients for us, there aren't any supermarkets that do online deliveries around here.

Our meals will look something like this:

Challah
chicken soup
meat
rice
green beans

Thursday night- our only milchig meal

Rolls
Parmesan and sun dried tomato tilapia
Penne- (not baked, made in pot)
Nish nosh salad (made with store bought dressing)
Sweet lukshen cheese kugel
Dessert: cheesecake or store bought ice cream

Friday morning

Challah- dips, fish
Oyster steak or kalachel (I will make a small piece of each)
Apple kugel
Potato kugel (maybe overnight?)
Deli rolls
Steamed broccoli
Pickles and cucumber salad
Maybe brownies and parve ice cream for dessert

Friday night

Challah/dips, fish
Chicken soup
Duck sauce chicken
Hot poppers
Potato kugel
Leftover deli rolls
Steamed broccoli
Coleslaw and pickles
No dessert- we’ll be tired!

Shabbos morning

Challah/dips/fish
Tomato salad
Coleslaw /pickles/hot peppers
Deli platter
Chulent
Overnight kugel from Chulent
Store bought mango sorbet or parve ice cream

Shalosh seudos

Store bought rolls
Some sliced veggies with dip
Hard boiled eggs - sliced
Cold lukshen cheese kugel - leftovers
Cereal and milk
Pineapple
Milchig ice cream

I’m laughing because simple in my house growing up looked like this: bagels, lox and cream cheese for one meal, omelets for another, pizza for another, soup and challah for another. Simple is all relative. Your menu looks great

And I don't even consider this simple. If it were up to me we'd have cereal and milk for most meals. Your menu is in no way simple, pat yourself on the back a bit.

So far I only prepared the milchig kiddush, nothing for the actual meals...

I made cheese cake (will top with blueberries and raspberries), mud cake, tiramisu, cheese blintzes and chocolate ganache cake.

Probably after that, nobody will really want to eat much else so I think we'll keep it light.

2nd day /shabbos will just be regular shabbos menu, maybe with an extra kugel and nicer desert.

Op, your menu sounds delicious, I wish we would eat a dairy seude.

I don’t think this is simple, but for what I am used to doing , this is definitely more simple than what I usually do.

Night 1:

Cesar Salad
Cheese Blintzes
Salmon
Fettuccine in creamy sauce
Homemade pizzas
Cheese cake

Day 1:

Challah and dips
Gefilte fish
Salad
Minute steak
Mashed potatoes
Two tone vegetable kugel (zuchinni/carrot)
Peanut butter ice cream pie


Night 2:

Challah and dips
Gefilte fish
Chicken soup
Pretzel chicken
Potatoe kugel
Cole slaw /sour pickles
Cake and ice cream

Day 2:

Challah and dips
Salmon
Egg salad
Cole slaw/sour pickles
Deli roll
Leftover pretzel chicken
Potatoe kugel
Cholent
Peanut butter ice cream pie

Shalosh Seudos:

Challah
Spreads (cream cheese , lox spread, etc)
Tuna salad
Egg salad
Guacamole
Cut up vegetables
Dairy ice cream

I'm pregnant, so we're doing simple that looks like this:

NIGHT:
fish
brisket
frozen potato balls from school lunches
fresh vegetable salad

DAY:
- milchig kiddush:
frozen cheesecake from school lunches
frozen cheese blintzes from school lunches
frozen cheese latkes from school lunches
chocolate milk from school lunches
anything else dairy school lunches will send up until Shavuos Can't Believe It

same fish
same brisket
same potato balls
same vegetable salad

SHABBOS NIGHT:
same fish
chicken soup from freezer
chicken from the soup
kugel from freezer

DAY:
same fish
eggs
chulent

Cuz they're not recipes and they dont require babysitting ( besides for the sushi. But that's gonna b date night activity with dh]
