Whats your best mac and cheese recipe?

I find that I have been making pasta for lunch super often during quarantine. So I’ve been changing it up in different ways, but the one thing I cant figure out is an awesome yet classic mac and cheese.

Please share!

This is yummy.

Mac ‘n Cheese (Kosher by Design Kids in the Kitchen)
• 2 cups raw macaroni + 2 tsp salt (or 4 cups cooked)
• 2 slices American cheese
• 1 cup shredded Cheddar cheese (or pizza cheese)
• 1/2 cup whole milk
• 1 Tbsp butter

Cook pasta with salt until al dente.
Drain very well.
Heat American cheese, cheddar cheese, milk and butter over medium flame until creamy.
Add drained pasta and toss to coat.

I do a classic bechamel sauce with cheeses.

A roux of butter and flour. Add milk, heat add cheese. Salt,pepper and a little nutmeg.

Sounds great! As I google to find out what a bechamel and roux are lol

Any specific measurement u can share?

I generally cook by eyeballing it, but I looked up a recipe that's similar, here's measurements it gives

40g/1½oz butter
40g/1½oz plain flour
400ml/14fl oz milk
1 tsp English mustard
100g/3½oz mature cheddar, grated
salt and freshly ground black pepper


(I frequently do this cauliflower instead of pasta for a classic British cauliflower cheese)

Easy Peasy Mac and Cheese:

Cook a box of elbows and drain.
Melt about a tablespoon of butter in the pot. Add enough milk to cover the bottom of the pot Tom. Add about ten slices of American cheese, one at a time, until it is all melted. Stir in cooked pasta. Delicious.

Store leftovers in a foil pan and rewarm the next day in a toaster, uncovered, for a crunchy remake.

bechamel sauce is really good. Another recipe online to do is with sauce (not sure if you like...) cooking with tantrums has a great faked ziti recipe. You can get exact recipe on kosher.com. You cook pasta in milk and water then add sauce and cheese and it tastes amazing. Also it’s one pot easy clean up with no straining.

Penne ala vodka
Heat 1 jar vodka marinara sauce
Add 2 cups heavy cream
When heated add Parmesan (I skip this)
Pour over penne.

I only make baked mac & cheese after learning this recipe. Dairy kills my stomach (sorry, TMI) but this is so good and I'm too lazy to make a vegan version after learning this lol.

Ingredients
3 1/2 cups of elbow macaroni
8 cups of cheese(s) of choice
2 cups of whole milk
1 1/2 cups of heavy cream
3 eggs
3/4 cup of sour cream
1 1/2 stick of butter
Seasonings...paprika, onion powder, garlic powder, salt, pepper

1. Cook your macaroni, but make sure not to overcook it.
2. Strain macaroni and add it into another dish (or pan).
3. Add 1 stick of butter to macaroni and stir it all up.
4. Add sour cream and mix again.
5. Add cheese 1 cup at a time until you've used 3 cups and mix again.
6. Crack eggs and add heavy cream and milk into a mixing bowl. Whisk into a custard.
7. Get another pan or whatever you will be baking the macaroni in and butter it with the remaining butter.
8. Add a layer of macaroni into that pan. On top of the macaroni, add 1 cup of cheese and layer it over the macaroni. Add 1 cup of custard. Repeat until all macaroni, cheese, and custard are gone. Your last layer should be cheese.
9. Add more paprika (if you want).
10. Bake on 375 for 45 mins.

Lol my favorite Mac and cheese recipe is literally just that. Macaroni and mix in American cheese. Delicious. (And definitely simple!)

Frozen basil cubes
Frozen onion cube
Frozen garlic cube
Salt
Black pepper
Hint of crushed red pepper
Cream cheese
Mozzarella cheese
Cottage cheese
Ketchup
Tomatoe sauce
Sugar
Milk
Sometimes I add spinach
Everyone loves it
