It probably depends what circles you are in. You should take that into consideration...
Yeshivish here, mostly see Liba. Also see some Leba.

In German, which yiddish is based on, the root word is spelled “Liebe” (love, and the name means beloved). But I agree that the spelling would be awkward and likely to be mispronounced in the US.

Like you say, the German spellings are different than English because of pronunciation of our alphabets. We also spell it Chaya, not Chaja. And Avrohom, not Awrohom.
Editing- I realize that both my examples are Hebrew, not German based, but I can’t think of other examples right now. Not enough sleep or something.
