Wow, so many eggs! I use 5 eggs for 15 potatoes (5 lb. bag).

Most ppl I know use an egg per one or two potatoes.

The zucchini doesn't make it healthy. It makes it creamy. Not comparable with or without.
I'm not sure what the seltzer does but it definitely makes a difference.

I do the same for years. Onion included. No fail. Seltzer or water produce equal results by me so I do either or.

About one cup to 6lb potato.

This is how I do it.
A bit of oil in a pot
3-4 potatoes (it’s just us 2)
2-3 eggs
1/4 onion depending how small it is but now weirdly the white onions are HUGE.
Salt
White pepper
Black pepper
Hot water from the urn
I turn on the oven to 350 first of everything else.
Then I heat up the oil in a small pot and cut the onion and put that in the food processor
Then while the oil is heating up I peel the potatoes
Then I mix the eggs
Then I add the hot oil to the food processor
I grate the potatoes with the food processor
Then I dump everything else in and add the spices and mix.
It always comes out white inside.
But I need to work on those measurements because sometimes it needs a little bit more spices haha.
Just before I put it in a small pan I grease it with cooking or olive oil
