Recipe for carrot kugel or cake using frash carrots

I have two options:
Sweet potatoe-carrot:
Grate
3 sweet potatos
5 carrots (total carrots and total sweet potatoes should have more or less the same weight)
3 eggs - mix them in
1 spoon of oil (some take more, because they like it oily, I don't think it's necessary)
salt (some add soup powder)
pepper
cumin to taste
put in greased alu mould of the right size
bake for 50-60 min in oven at 200°C, without covering (I put it together with the clay pot for the Friday evening meal)
Carrot-potato-onion
Grate
3 potatoes
3 carrots (carrots and potatoes should have same weight)
1 large onion
2-3 eggs - mix them in
1 spoon of oil (some take more, I don't think it's necessary)
salt
pepper
Put in greased mould
bake for 50-60 min at 200°C (which would be around 390°F)

I absolutely LOVE this one:
Carrot Loaf
1.25 cups flour
1 cup sugar (I've been cutting this in half and its still yummy)
1 cup grated carrots (shredded works too)
1.25 tsp baking powder
2 tsp cinnamon
3/4 cup oil
1 tsp vanilla extract
2 eggs
mix all. Bake 325 about 45 minutes or until toothpick comes out mostly clean.
Makes great muffins too.
Recipe says its also good with zukini, but I haven't tried that yet.
