I know I am early, but I am thinking of ideas what to cook in the 9 days.
My family is not too much into cheesy stuff (apart from Pizza) and fish every night is expensive.

Quiche
Baked potato bar
Falafel
Scrambled eggs ( I serve with pita and veggies)
Pancakes/waffles

Also, because shabbos is in the middle, you can really get away with doing pizza once each week.

Vegetarian korean "beef" and rice (made from lentils)
Jambalaya
Vegetarian chili
Vegetarian curry
Black bean burgers
Split pea soup and pretzel rolls

Anything with impossible beef (burgers, meatballs, tacos, meatloaf)

Another one if you are adventurous:
Tempeh (next to tofu in stores). I make tacos with it. Crumble it up, brown in a frying pan and add a taco seasoning packet. Cook like ground beef.

Roasted vegetables with crumbled feta in a wrap.
French omelettes with warm crusty bread and a leafy salad.
Black bean burgers with all the fixins.
Customize your own individual pizzas.
Falafel balls, warm pita, tehina and avocado relish.
Grilled cheese layered with thinly sliced veggies, and creamy tomato soup (tortellini in the soup, optional).

Anyone have a recipe for homemade falafel. Can't buy because need to be gluten free. Can substitute flour for gluten free for at home.

Here is one that is fried and made with dried chickpeas. Super close to the real thing you would get in Israel: https://toriavey.com/toris-kitchen/falafel/

Here is a baked one that is way faster. Uses canned chickpeas. I sub dried herbs for fresh, though a little less than the recipe says. Texture is not the same but tastes delish: https://www.familyfoodonthetab.....auce/

Wegmans in Lakewood. I don’t travel all the way from Brooklyn just to get it tho lol. I’ll pick up a bunch whenever I go and freeze them.
I think I’ve seen in Whole Foods.

focaccia bread, or garlic bread with onion soup
Zucchini stuffed with vegetables, cheese, and baked
Home made pizza knishes
Salmon marinated in sugar, salt, and grated beets

In the spirit of the 9 days
I dont make anything that is slightly gourmet
Oatmeal
Eggs
Bread and cheese with simple ingredients
Simple salads
Rice and bean dishes
Or leftover parve dishes from Shabbos

I make a darned good jambalaya with chicken and sausage (not as good at what I used to get at a New Orleans jazz festival I used to attend before I started keeping kosher, but still good). But how on earth do you make it without meat?
