Just wanted to add I do work in a very predominantly Jewish business so if I know the person is Jewish I will sometimes sign off with good shabbos. So we'll also be appropriate around various holidays to which people a good holiday or a happy weekend on Fridays

Lol that amused me because that is pretty standard here in the UK. I wouldn’t think twice and would write kind regards. Less formal would have best wishes.
