Freezing cheese latkes?

Hi,
Would anyone know if it's okay to freeze cheese latkes/pancakes? (They're made from cottage cheese, eggs, sugar, stevia, whole wheat flour and cinammon.) Thanks a lot! Also, how would I defrost?

Sure, why not? Cheesecakes and blintzes, etc. are frozen so I can’t see why these would be different.

Yes, not a problem. I have frozen cheese latkes and my kids take them for lunch and heat them in the microwave.

thanks. I did not follow a specific recipe, but it's something like this one:

1 container (approx 493 grams) cottage cheese
4 eggs
1 c whole wheat flour
1/2 c sugar (I put less, and put some stevia)
cinammon

mix, fry on very low flame with minimal to low oil


Now, if I don't have a milchige microwave, how would I defrsost? Could I just leave it out to defrost, or does it need to be rewarmed? Also, how should I freeze? Is a plate wrapped in aluminum foil ok?

I freeze them wrapped in aluminum foil. You can eat them cold defrosted or rewarm on the stove or betty crocker.

You can warm them up in a Betty Crocker and they're delicious, but if you don't, you can warm them up in a frying pan with a tiny bit of oil or in the oven on a baking sheet. But yes, they should be warmed up, not merely defrosted.

If I freeze them on a plate, will they stick to each other, and not be able to be separated when I defrost? Or will they be ok?

They freeze well. Put parchment paper in between each one otherwise sometimes it gets hard to separate before they fully defrost.
