I feed my pet. But cook after chatzos. Not sure where your starter falls. Smile But if it can wait 2 hours, chatzos is at 1:01pm. Very Happy

To make a sourdough starter, you mix flour and room temp water and then leave it in a warm place for 5-6 days. Natural yeast and bacteria form. As they do, the top half is discarded and more added. It starts to smell sour.
Since the starter is alive, you have to feed it regularly, otherwise it dies.
Sourdough starters stay on the counter and need to be fed all year. A small amount is taken to use in the making of sourdough bread. It is used instead of yeast. Starters need to be sold for pesach.
