Hi,
Can anyone give me ideas of easy foods to cook at home and bring along for vacation? Going to a place with no kosher food

Just yesterday I compiled a list. Here you go
Breakfast:
Cereal and milk
Granola
Fresh fruits
Yogurt
Bread/rolls with peanut butter, tuna, egg salad, Lox etc.
Fresh veggies
Lunch/ Dinner:
Grilled cheese sandwiches (bring along sandwich maker/ panini press)
Pasta with marinara sauce
String cheese
Salami sandwiches
Healthy snacks:
Granola/ oatmeal bars
Dried fruits, nuts
Rice cakes, crackers
If u pack an electric kettle you can bring along instant oatmeal packets and noodle soup, or those meal mart dry packaged meals that you just need to add hot water to.
There are other kitchen appliances as well that could be helpful, like a plug-in omelette maker/ breakfast sandwich maker/ mini hot dog maker... might be worth it for you to invest.

Editing to add: just noticed you specified food to cook@ home, these are rather ideas of ready (relatively nutritious) food to pack along or prep easily while away. Leaving them up cuz I hope you'll still find them helpful.

thinking to take along a crockpot and put up meat and potatoes for dinner in the morning before we head out. this way when we get back to the hotel we have hot dinner waiting for us....
