I thought of bread, peanut butter, butter?, cheese, turkey roll, crackers, cookies, fruit——
What do I bring for a family? (No toddlers)

Will you have a fridge or a cooler?
Granola bars
Nuts, raisins, seeds
Canned fish - salmon, tuna, sardines
Chocolate!
Fruits and vegetables - most are fine without refrigeration for 2 days
Bread/rolls/pita/laffa - individually packaged will stay fresh for 2-3 days
Danishes, cookies, all kinds of snacks
If you have a cooler, you can pack in small bottles of frozen milk and use one per day/meal. Eat with cereal or cookies. You can also pack in blintzes.

I would actually pack frozen meat and to a barbecue for supper the first night with a portable grill so at least you have normal supper one night. I would bring a sandwich maker to make eggs, or other sandwiches. If you have access to a fridge, I would bring schnitzel for the next night. I would bring cereal and boxed milk for the morning. And sandwiches for lunch.

If you can get a hot water thing that plugs into a wall, then you can take instant soups, oatmeal, or even anything that just cooks with hot water like couscous.

Bring a dairy sandwich maker and a meat panini press.
You can make grilled cheese, French toast, scrambled eggs, pancakes in the sandwich maker.
And you can grill chicken cutlets, meat, hot dogs, hamburgers on the panini press.

Will you be near a grocery store? Most stores will have a lot of things with an OU on them, no matter where you travel. Even if it's just snack crackers, you can find things with a basic heksher.
You can do salads, veggie sticks, and fresh fruit. Add a can of tuna to the salads for extra protein.
Make sure to pack your own knives, mixing bowl, etc. You can buy disposables at your destination.
If you can handle the extra weight in your luggage, a sandwich maker or electric skillet is a good idea. If not, cold food like salads and deli sandwiches for two days will not kill you. In the summer that's pretty much what I make for Shabbos anyway.

If you will have access to a microwave, you can bring double-wrapped food and heat it up in there. Just steam it first with a cup of boiling water.
