Me neither but don't worry this year is shabbos plus 2 meals really not a big deal!
Shabbos I will serve regular shabbos food!
Chicken soup, roasted chicken, green beans and potato kugel for friday night.
Salads and chulent for shabbos lunch.
I always make roast on yom tov with cut up carrots served with farfel/orzo!
Honey/soy sauce salmon with sesame seeds on top!(super easy and delicious!)
First course is always a huge salad for health reason and everyone likes it! (Optional, whatever your family likes: Romaine, cucumbers, peppers, tomatoes, hearts of palm, baby corn or reg corn...you can add croutons or chinese noodles, less healthy, or grilled chicken or deli meat!)
The night meal will probably be soup, chicken stir fry served with rice.
I might make a cranberry kugel as an extra.
Desserts: fruits, bought sorbet/ice cream, honey cookies
Obviously will serve some simanim on first night and shehechiyanu fruits on second night.
ETA: I find that after eating fresh challa with honey, we're already quite full so I don't make too many different foods!
