We're going to my parents for Yom Tov, and I would like to make a main dish. My mom said she's cooking really simply, so I figured I'd bring something along.
We're on a diet and would prefer not to make anything too sugary or fattening.
Any ideas?
(Don't worry, I will run it by her first!)

Vegetable based anything would be heaven.

Just made a first cut brisket (less fatty) with sauteed onions, tomato paste, balsamic vinegar and dates. Haven't tasted it but it smelled and looked delish. No added sugar which is my #1 criteria.

For RH I like to roast whole chickens rubbed with apple butter. Extremely easy and tasty and no bad ingredients.
