here's a really great one I just made... and so easy. comes out cookieish consistancy...
HAMANTASCHEN COOKIE DOUGH (PAREVE)
Source: Jewish Calendar for Children 1979
Yield: 15 (using a 1 lb. coffee can)
• 2 c. flour
• 2 tsp. baking powder
• 1/2 c. sugar
• 1/2 c. shortening
• 2 eggs, beaten
• 1/2 tsp. vanilla
• 1/2 tsp. rum or almond extract
1. In a large bowl, mix dry ingredients.
2. Cut in shortening.
3. Add eggs and extracts, mix well to form dough into a ball.
4. Roll out dough on a floured surface and cut into circles using a 1 lb. coffee can for large hamantaschen or a wide mouth glass for smaller hamantaschen.
5. Place filling in center of each circle and turn up 3 edges to form a triangle. Pinch touching edges together to seal.
6. Bake in oven preheated to 350 degrees F. for 25 to 30 minutes until lightly golden.
7. Cool completely; store in airtight container.
NOTE: The original recipe called for using chocolate chips as a filling, but you can use more traditional fillings. You can also use egg substitute and 1/3 cup of oil instead of the shortening with success.

I fill mine with browned and spiced chopped meat for a forshpeiss for the seudah.... a cool change from regular ones, but of course we have traditional hamantashen for dessert.
BTW - does almond extract really have any almonds in it - or is it all artificial?

I do line cookie sheet with parchment paper, but I dont spray it.

Used it, very easy to work with. I wanted to test out the dough before preparing the brownie mix - just to make sure I like it. Well I decided to bake up a few pieces this morning and filled them with gingerbread flavored taffy candy (leftover from Chanuka season) - YUM!
I was thinking that a nice savory hamentash could be filled with sweet potato puree and served warm next to brisket.

K, reporting back.
Great and very forgiving dough to work with (my KitchenAid made it in no time at all). Everyone loved them! THey were gone in a blink of an eye. I used apricot, strawberry and poppy seed fillings.

my daughther came up with an idea that she wanted to give all the old residents at the old aged home hamentush for purim...
sooo COOKIELADY I took your recipe and made like a million hamantush...
we bagged them and on friday afternoon I took my kids to the old aged home. armed with a huge basket filled with little 'purim pekalach' for these old people... my kids went around and handed them out to everyone saying purim sameach! ... this made them(the young-kids-and old) sooo happy and tottaly worth the effort!
but cookielady, if it wasnt for your recipe, I would never in a million years have managed to do this!
so thank you thank you thank you!!!

Yum, I love the idea of savory hamantaschen appetizers or side-dishes. Will try those next year iy"H....
I like cookielady's dough recipe because it's made with with OIL not margarine (nasty stuff) or shortening.

These are by far the best. I filled half with jam & half with Duncan Hines brownie mix & my mother loved them so much she came over on Shabbos to have more with a cup of tea.

okay I tried the brownie filling ... some popped open but others stayed nice - a hit for those who do not like the usual fillings ...
I made a crazy cake with some dough - brownie - raspberry - choc bits & crushed almonds ... kids thought it was fabulouso
