I'm purchasing a Bosch
[finally]
Do I need those attachments
or
will I be able to mix cookie/cake without it?
[anonymous so my family/friends don't figure me out]

I don't know about a Bosch but the KitchenAid comes with a whisk, paddle, and kneading hook. You really want to use the paddle; the whisk can't handle dough and will break, and the kneading hook is appropriate for...kneading, not mixing.

It usually comes with all the attachments that are needed (and the stainless bowl and heavy challah dough hook are sold separately).
Can you post a link to what you're purchasing so we can see it has what you need?

I think the cake paddle is standard, it's the cookie beaters that are extra.

My Bosch mixer came with the dough hook - (used with the silver bowl), cookie paddle and cake beaters (used with the white bowl).

I have the Bosch for 15+ years and I never used the cookie paddle. I’m mix cookie doughs by hand and don’t see the need of taking out the heavy mixer for that.

My Bosch only came with the dough hook and metal bowl in addition to the wire beaters and white bowl. I purchased the cookie paddles separately and love them. I use them for heavier and thicker doughs (not bread but cookies or bars). The wire beaters can get bent if you use them and the dough is too thick and heavy.
