Please help me narrow down simple but must be healthy pure

Pure ingredients
Simple
Healthy
Rosh Hashanah
Gluten Free

Really have almost no time due to some extenuating circumstances.
Want some yom tov feeling.
Hard to have time to sit down and make a menu and figure out lists .
If you can help me it would be super appreciated!!!

This is my Simple & kid friendly
Fri night
Chicken soup w/veggies
Flanken ( the more expensive cut....just add spices and cook @ low temp for long time )
Salad
Potato kugel
Some dessert

Shabbos day
Green salad
Corned beef in the crock pot
Broccoli kugel
Noodles for kids

M”S
Same as Friday night

Sunday
Not sure yet

Friday night:
Whole tilapia (with the head, no tail)
Gefilte fish
Beet green Kugel (replace spinach)
Purple cabbage salad (I bought purple by accident, I wanted regular)
Chicken soup
GF honey cake for DD, regular for the rest of us.

Other meals:
Salmon
Carrot Kugel
Roast
Cholent (GF is a can of beans, meat, potatoes and spices. Often a small sweet potato on top)
Sweet potato Kugel
Homemade peanut butter cups

We incorporate the simanim into the meal. But I orefer the pomegranate in its original form. And the dates are the haeitz.
I have made warn apple pie with ice Cream. Not this year though.
