Which version of Ticket to Ride game do you recommend?

If you don't have the original, start with that. It's loads of fun and the other versions build on it (with new, extra rules) so it's easiest to start with basics.

Splendor is a great game, there's no reading involved so even younger children can play, though 8 is a good place to start, too

Settlers of Catan is a classic.

My kids used to love playing Pandemic but haven't lately, it hits a little too close to home if you know what I mean.

If you like card games, Taco cat goat cheese pizza is fun and silly. That and Slamwich are good for non-readers. Fluxx and Spaceteam are good card games but they involve more reading.

We're really into games here so I have more suggestions, too, if you like.

It's just called plain old Ticket to Ride (it's the North America map).

I would recommend starting with both America, and then progressing to Europe if your kids get into it. My personal favorite is ticket to ride rails and sails, which is more complicated (trains and boats!) and is pretty hard to find.
