I have a recipe that I usually use, but I'm out of one ingredient. Can you post how you make techina from unseasoned tahini? Thank you!

Equal parts techina and water. Add some lemon juice and garlic.

Lemon juice - I put maybe a teaspoon (depends how much techina you're making), and add if it's not enough.

No salt.

For the garlic, I put 2-3 cloves.

I also add lime and drop of sesame oil and honey if I want to use it on eggplant or dressing

I add hot water, squeeze of lemon, salt and sometimes garlic powder. Mix it till it's smooth. Taste and adjust spices

Also a tip, add the water gradually if mixing by hand. Much easier

yup! besides the fresh garlic and lemon juice others mentioned, I also add parsley (fresh if I have it) and a little salt and cumin (based on the recipe I found years ago in A Taste of Shabbos) so delicious!!!

yum that sounds amazing. do you mean toasted sesame oil though? because techina is already full of sesame oil so I'm curious about adding more

I made it: I definitely needed to add salt; that's the flavor we're used to. I also put lemon juice, 2 garlic, and a dash of pepper - with parsley flakes and a bit of dried dill. I always add greenery to my dips, just love the look. Smile

I use my immersion blender to mix it so it's 1-2-3!

Best is fresh ingredients.
In the food processor. Techina, garlic, parsley, lemon juice. When it's fresh it tastes like you'd never believe.
Water & salt.
Amounts are to taste Smile

The best tip I learned, both from the cookbook Israeli Soul and from @busyinbrooklyn is to use ice water in tahini.
Since it's a fat, the cold water will make it creamier and fluffier, similar to the texture of chummus. Think of cold butter vs melted butter.

Salt and sugar and lemon juice and ton of watter. Blend till u remember to turn off the blender

A little salt needed (1 tea spoon)

Some add also pickeld cucumber water but I dont like it that way

Do a google search and it will give you many ideas
