All the years I made regular long challahs for seconds days of Succos. Now my husband thinks I need to still make round.
What is the true answer? Or are there different minhagim?

When we buy from the bakery, they are still round through Simchas Torah.

Really depends on your minhag. We do round all the way through Simchas Torah. We also keep dipping in honey through Simchas Torah although I know people who stop after Hoshana Rabbah. It would make sense that the people whose minhag is to stop dipping in honey after Hoshana Rabbah would also be the same ones who go back to regular straight challahs for Simchas Torah.

We do round until tomorrow day. (hoshana rabba meal)
Tomorrow night back to regular

You don't "have to" do anything. You like round, there's justification for it. You don't like round, regular shape is perfectly fine. For that matter, if you don't like or want the traditional braided loaf, go ahead and bake your challah in a regular loaf pan, or a baguette pan if that's what floats your boat. You like honey, use honey. You don't like honey, your meal is still kosher even if you use salt. These things are symbolic, not halachic.

My grandparents did that.
My parents' minhag is to check what's left in the freezer, and follow the above minhag for fresh challos.

My mom did long for second days. Hubby wants round.
Mil makes different things on top for different yt. Don't know exactly. Hands. Birds. Crowns.

I always do round through simchat torah though I don’t feel particularly strongly about it.
