I want to make roasted sweet potatoes for the motzai shabbos meal. Has anyone done so in advance and rewarmed? I always make fresh and would prefer to do so, but I don’t think I’ll have time from when shabbos is over until the meal to do so. Any tips?

I frequently bake sweet potatoes in advance for shabbos but if you want fresh (and I have done this as well) you can chop them up and keep them in a zip lock until you want to bake them. Just dump onto a baking sheet, spice and bake. Saves some time.

I roast them cut in half, cut side down and they cook a lot faster and get super caramelized. I have done it for a night meal on yomtov but you would have to leave your oven fairly high.
