Hi how long do I cook for on stove ( grill pan) ?
I want it nice and raw ( not too raw though)

Just until you get a nice crust on each side. Anout 3-5 minutes per side.

And slice it against the grain. This is how you get a tender slice that is chewable.

I did 5 min each side and it was so raw?
So frustrating I can’t seem to get this right
How do I make this fri night?
I’m thinking to grill it 5. Min each side then let it sit so it cooks it’s self and it’s not so raw?
The question is then how do I reheat this?!?

You wrote that you wanted it rare.
If you actually want it medium (pink not red), then after searing 5 minutes per side, put it in a pan and cover it, then put it in a 400 degree oven for about 15 minutes. You can use a meat thermometer while it's in the oven, and remove it when the internal temperature reaches 145 degree for medium. Let rest a few minutes, then slice on against the grain.
