Extremely deep & pretty shallow. Also it has 2 full shelves as opposed to my old kitchen that upper shelf was 1/2 so easier to get things in/out. How to organize?

What do you mean by extremely deep and pretty shallow?

23” deep. I can’t adjust the shelf height so having a hard time with talker items like mixer, food processor.

Can you drill new shelf holes higher up? And similarly, can you cut down the upper shelf if you prefer it to be shallower?

Question is will I gain more by cutting shelf or not? I’m really tight in cabinet space. Was thinking of adding on a pantry. But kitchen is like a cherry wood & cant find exact match...

Do you know the brand of the cabinets? A lot of times it is on the drawers.
If you can't match the pantry don't try - you can add a piece that "goes" with the kitchen in a different color or door style.
You can add roll outs to the bottom cabinets so that you can get to the items in the back. If you do this can you move some items from the top cabinets down and put your appliances on the bottom of the top cabinets?

Big appliances generally shouldn't be put on upper cabinet shelves because they can fall and break things. Any room for them down below? Pots are lighter than a mixer or food processor and might make more sense on top than the appliances.

For deep upper cabinets use lightweight baskets that you can take down, or big lazy susans you can spin, or container drawers that you can pull down from the base.
