Is there any way to "spice up" mac & cheese?

Literally? Cayenne. Fun twist- Mac and cheese balls. I make it using a roux and my own blend of cheeses but you can use boxed. Make as normally would. Freeze on sheet pan lined with parchment. Shape into balls. Dip in egg and breadcrumbs (preferably seasoned) freeze again and then fry (deep is best).

Add a spoonful of pesto or some caramelized onions. Use more interesting cheese or a combination of a few different ones.

Alton Brown has a really nice baked mac and cheese recipe with chopped onions and mustard powder. It's very savory.

Garlicky mac n cheese-- saute some minced garlic in the butter/oil for your roux.
Other ideas:
Mustard (powder or condiment)
Hot sauce (e.g. Frank's RedHot)
Boil broccoli with the pasta you'll be using in the recipe
Fried mac n cheese balls (leftover mac n cheese shaped, breaded, and fried/pan fried)
Creamy twist by boiling the pasta in milk (must stir continuously)
