Low carb side dishes ideas

My husband is on a low carb no sugar diet.

I am at a loss as what side dishes to make.
He wont eat broccoli, cauliflower, zucchini or mushrooms.

Any idea what I could make for him?
I want to be a good wife and help him on his diet. Smile

Without veggies there are very few good choices. Salad vegetables?

Would it need to be very low carb or away from carbs? Cause I make a mix of green beans, wax beans, sauteed onions and peppers. It's delicious and less carbs than starches. I can give you exact recipe if you want. I also do a lot of fresh salads as a side.

Cook cauliflower really well, drain, and put it in a blender until creamy. Season it like you would mashed potatoes. If you want to thicken it, you can add a few teaspoons of instant mashed potatoes.

If making with a dairy meal, add a few tablespoons of heavy cream, and some real butter. It's amazing. My ex despised vegetables of all kinds, but he ate this quite happily and never knew the difference. Very Happy

Is your DH disliking the taste of the veggies, the texture, or just the very idea of veggies in general? If it's a texture thing, try to steam or stir fry them until they are just barely cooked, crisp/tender. I think that most people who say they hate vegetables, have only had veggies that have been boiled to death. It's a real shame.

Try cauliflower rice and butternut squash fries.
Make the rice interesting for him, maybe with sausages in the rice if that's what he'd like, or whatever he's allowed.
Buy the crinkle cut butternut squash sticks at the store so that it's more appealing. Season it so that it tastes great when chili and garlic.
You might be surprised.

Not necessarily only your husband but sometimes people have unrealistic expectations. He will have to decide what he values more. It’s either his health and eating food not exactly to his previous standards or gourmet carbs and being overweight and diabetic.
I eat a lot of those that he won’t eat because they are the fastest to prepare
You can make beet salad, pickle salad, spinach ( can I assume this is out as well?) tomato salad.
You can try preparing riced cauliflower the same way you spice rice or like Mac and cheese.
Would he eat vegetable soup? That can be very filling and he might not mind zucchini in a soup.

Cut tri color peppers into quarters. Slice vidalia onions into 3 parts, like 3 big circles. season with spray, salt and pepper. Roast at 400 to 450 about half hour. Flip midway.

Roasted veggies: you can use peppers, cherry tomatoes, red onions, sliced carrots. Season with olive oil, salt, pepper, oregano.

I would ad zucchini and mushrooms too but...

Would he do broccoli kugel?

He is allergic to mushrooms. Maybe I could hide zucchini. He won’t eat broccoli or cauliflower because of bug issues even the frozen checked ones. But I may blend it so won’t be a problem and won’t tell him what it is.

Hmm those four are definitely the most used veggies. Most vegetable kugels use one of those. Unfortunately makes it more challenging to eat healthy.

You can try Cole slaw with Splenda.

Roasted carrots. You can use thin ones and roast them unpeeled whole. Yum.

Make lots of soup and salad

I make a veggie soup with lots of diced onions, carrots, peppers, zucchini (I know)

I let the onions and carrots fry/cook first without water for a while.

I don't use too much water, so it's very hearty. and I season with salt, garlic, pepper and dill.

You can also try cream of zucchini soup, super easy and doesn't taste very zucchini-y

(My husband's also low carb)

Green beans with garlic or pastrami
Mock liver out of green beans
Eggplant babaganush
Cabbage salads
Carrot chips
Spaghetti squash kugel
Letcho
Medley baby corn, peppers, sugar snap peas

Kohlrabi or jicama cubed sautéed with salt and paprika
It’s like hash browns

Avocado there’s lots of recipes
Personally I don’t like it hot but some do

Celery sticks with a filling, tuna, egg, almond butter, chicken salad, tehina

Pickles- salt is important on a low carb diet

Mashed cauliflower faux mashed potatoes- almost tastes like the real thing- plus if you add some nutritional yeast it almost tastes like a cheese sauce

Just be careful with portion size
Veggies even low carb ones have carbs
Veggies are not free food on a low carb diet

If you want blended cauliflower, this soup is delicious. The recipe name is actually Mock Potato Soup. I call it cauliflower soup, but there's no need to call it that.
