I once saw a yummy looking recipe for tomato vegetable soup that was made with canned tomatoes. Looked really good, so I bought the big cans of canned tomato, and then I got corona....
Now that I'm finally back to cooking, I cannot remember where I saw the recipe!
Any good recomendations?

Bais Yaakov cookbook has a tomato basil soup with canned diced tomatoes that is delicious.

I actually just made one today and it was delicious. It had barley in it, but I guess you can omit.
Saute one large onion, 2 cups celery, 1 cup carrots for a few minutes. Add 8 oz fresh mushrooms and saute another few minutes.
Add 28 oz can chopped tomatoes (I prefer crushed). Mix. Add 1/2 cup barley, 6-8 cups of water, 1/4 cup onion or vegetable soup mix. Sprinkle salt and paper, and 1/4 tsp crushed red pepper flakes. Lower the heat and cook for about 1.5-2 hours.
You can garnish with fresh dill or fresh celery leaves.
