Hi! Does anyone know if I can use chicken cutlets instead of chicken bones or chicken bottoms in my chicken soup? If yes, does it compare in flavor? And does it become more "piecy"( ie pieces floating around)? Thanks a lot!

No. Chicken soup needs the fat that comes from skin and bones. It will not be anywhere remotely as good as using bone in chicken

It’s OK if you use pre-mains chicken broth and just put chunks of chicken breast and veges in.

NO, it's not good, it won't have any flavor.
You can use chunks f cooked breasts when you serve the soup, but not to make the broth.

You can use bone in chicken breasts. You need the bones. Also expect the chicken to be dry tasteless after cooking the white meat so long.

I use it. It is much easier to serve. Kids like the texture better than bottoms.

Bones give more flavor and health benefits. What I usually do is make chicken stock from bones and use that water plus cutlets for actual soup. But I'll use just cutlets if that's what I have.

I started doing it l'chatchila. The trick is to cook it for a very long time and use more chicken then you would with bone chicken. My family actually prefers this way so I switched.

I’ve used chicken gizzards if you happen to have that.
