Made this for shabbat last week with my 5 year old. Absolutely delectable and easy.

Cookie Butter Bars

3 cups all-purpose flour

1 cup sugar

1 cup neutral oil (such as vegetable oil or coconut oil)

1 large egg

1 teaspoon Gefen Vanilla Extract

2 cups crunchy Lotus Biscoff Butter

10 Lotus biscuits, crushed

Ice cream- no recipe but yum. 1 pint vanilla ice cream. Wait until it’s a bit melted and swirl in lotus spread (you might have to melt it in the microwave first for 10 seconds to makes it workable.) serve with nut crunch or spread into a pie crust drizzle with chocolate and crunch and freeze.

I know this is old, but I recommend this recipe, with two tips:
1. I found half a jar of lotus butter to be enough, it's just a thinner layer
2. instead of melting the butter in a microwave, I spooned it onto the lower layer and put it in the oven for 3-5 minutes. Then it's melted and you can spread it all over and add the crumbs

ETA I left out the lotus biscuits completely

One kinneret cookie flattened in a ramekin a pc of Rosemarie pareve chocolate and dollop of lotus cream another flattened cookie on top. Bake 350 for 13 min exactly so it's still runny ish can serve w pareve van ice cream so so easy n heavennnnnn

you can also use it instead of chocolate or cinnamin filling in babka or cinnamon rolls
