It's a recipe of potatoes and ground meat more or less with exact measurements. Pretty easy too.

These may look like ordinary latkes, but they are anything but' If you thought potato latkes couldn't get any better, you should definitely try these. They got rave reviews from my two pickiest eaters, and work well with ground chicken, too.
Yield: 24 latkes
5 large russet potatoes. peeled
1 medium onion, chopped
4 eggs
2 tsp salt
¼ tsp pepper (or 3 twists of a pepper grinder)
12-16 oz extra lean ground meat
Oil, for frying
Using a food processor fitted with the knife blade, process 2 potatoes and the onion.
Transfer the mixture to a medium-size mixing bowl, draining as much liquid as you can.
Change the blade to a thin shredding blade and grate the remaining 3 potatoes. Transfer the grated potatoes to the mixing bowl.
Add the eggs, salt, and pepper, as well as the meat, and mix well.
Heat the oil in a frying pan over a medium-high flame. Using a slotted spoon, gently drop several spoonfuls of the mixture into the hot oil, taking care not to crowd the pan. Fry on each side for 6 minutes, until golden. Using a slotted spatula, transfer to a plate lined with a paper towel to drain.
Tip: These rewarm beautifully, however there is nothing like a fresh latke!

You can also use instant dried potato flakes mixed with matza meal if don’t want to shred/grate real potatoes. I did that last night and the latkes came out amazing! A similar recipe was in family first.

To ecru I just put in enough potato flakes and matzah meal to reach a dough like consistency so can shape into patties. Also, need to fry them a bit longer til brown on each side.
